  • Chef Stuart Duff: Hilton’s Corporate Chef UK & Ireland, brings decades of culinary expertise to the table.
    With over 38 years of culinary excellence, Stuart Duff has helmed kitchens at prestigious establishments including Hilton, IHG, and Macdonald Hotels. As Hilton’s Corporate Chef UK & Ireland, Stuart’s leadership and innovation have earned him numerous accolades, including Executive Chef of the Year (2018), Britain’s Best Brigade (2016), and the Best Hotel Menu (MIDAS, 2024). Renowned for his passion, creativity, and mastery of flavor, Stuart consistently crafts unforgettable dining experiences that leave guests eager to return.
  • Chef Paul Taylor: A celebrated chef with a rich background in prestigious establishments, adding his culinary flair to the event.
    Chef Paul Taylor is a highly accomplished Executive Chef at Hilton Birmingham Metropole, where he leads a dynamic team of over 70 chefs, crafting exceptional cuisine for events hosting up to 1,400 guests. With more than 30 years of culinary expertise, his impressive career includes key roles at renowned venues such as Hilton London Metropole and Park Lane Hotel. Celebrated for his outstanding culinary talent, leadership, and deep industry knowledge, Chef Paul consistently delivers extraordinary dining experiences that impress and inspire.

Event Menu:

Starters:

  • Pork Cheek – Braised in Somerset cider with apple and pancetta (GF)
  • Porlock Bay Oysters – Served with chilli and ginger (GF)
  • Harissa Roasted Butternut Squash – Served with a pomegranate and pumpkin seed salad (GF)

Mains:

  • Exmoor National Park Rib-eye Steak – With celeriac mash, roasted shallots, rainbow carrots, and a beef jus (GF)
  • Teign Valley Mussels – Cooked in Lyme Bay white wine, served with hand-cut fries (GF)
  • Leek and Mushroom Pie – With Exmoor Beast gravy and greens

Desserts:

  • EX Gin and Tonic Trifle
  • Chocolate Delice – Served with homemade salted caramel ice cream (GF on request)
  • Elderflower Crème Brûlée – With homemade shortbread
  • Selection of Styles Sorbets

  • Ticket Price: £39.50 (includes cocktail, three-course meal, live entertainment, and exceptional service)

Please note:
The 13th and 14th will be the same menu but there won’t be entertainment, a Hilton cocktail or Hilton chefs/staff, therefore the menu is at a reduced rate for these days.
