Michelin Star chef hits crowdfunding target for new restaurant in 8 days

 

After launching a campaign on crowdfunding website Kickstarter, North Devon based chef Thomas Carr has reached his target after just 8 days. The new restaurant will now open in Ilfracombe, named Thomas Carr Seafood & Grill, and join Thomas’ fine dining restaurant ‘Thomas Carr at the Olive Room’ in the North Devon town.

Recruitment campaigns and work have now started to open the new venue, in the old Lamb Hotel building on Ilfracombe’s High Street. A launch event is scheduled to take place on March 15th.

‘’We hope to be able to get partly open during February, then build up to a full launch with the event on March 15th’’ said Thomas, ‘’We’ve been blown away by all the support we’ve received. Not just in the money raised, but also the kind words and support’’. A target of £15,000 was set and reached, with funds raised now at £17,990. ‘’We don’t want to stop here, the reality of a new venture like this is it needs a fair amount to get everything up and running. We’re now all set to open, but to do things the way we’d really like to do them, we want to keep that total rising’’

In order to keep attracting more backers, the team behind the project have added more ‘rewards’ for ba

ckers to choose. Backer’s can choose to pledge anything from £10 – which will get your name printed on the restaurant’s planned ‘wall of fame’ right up to £8000 – if you’d like Thomas to cater an event or wedding for 50 guests. The campaign ends on January 27th 2018.

‘’Crowdfunding this way is a win/win scenario all round’’ continued Thomas, ‘’We’ll get well needed funds towards getting things off the ground, but the backers have all backed rewards they know are really good value, such as meals at the restaurants and even dinner parties in their own homes’’. Thomas will be visiting 5 different homes to cook meals for backers and their guests.

Thomas Carr prides himself on producing food of a consistently high standard, establishing a passionate, dynamic and creative dining/kitchen environment. Always experimenting with ingredients, flavours and techniques to push the boundaries of food and exceed the expectations of each customer.

Thomas has always been driven by a fundamental love of cooking and food, always seeking to learn and grow as a chef.

His journey started when he was employed as head chef in 2002 at the Beachcomber Café in Wool

acombe, Devon – his hometown. From here Thomas moved to the Watersmeet Hotel, again in Woolacombe, where he was Chef De Partie for 5 years between 2004 and 2009.

In March 2009 Thomas went to work under renowned chef Nathan Outlaw at his Seafood and Grill Restaurant @ The St Enodoc Hotel in Cornwall. Originally taken on by Nathan Outlaw as a Sous chef, Thomas’ potential was quickly noticed and in February 2010 he was appointed as Head Chef at the brand new ‘Restaurant Nathan Outlaw’. Under Thomas the restaurant received two Michelin stars within a year of opening, along with numerous other accolades and awards within the hospitality industry. As well as the day to day running of the restaurant, Thomas also participated in outside events linked to the restaurant and Nathan Outlaw; including a ‘pop up’ restaurant in London and several food festivals/events.

In 2013 Thomas returned to North Devon to take up a role as executive chef at The Coach House, Kentisbury Grange, allowing him another opportunity to work with a renowned chef in Michael Caines MBE. Thomas built a full team from scratch and achieved 2 AA Rosettes within 6 months of opening as well as a full entry into the 2014 Trencherman’s Guide.

In the spring of 2014 Thomas was presented with an opportunity to fulfil a lifetime dream of owning his own restaurant in the harbour town of Ilfracombe, North Devon. The mixture of a bustlin

g, up and coming area and fresh line caught fish delivered to restaurant on an almost daily basis has made for a hugely successful start in business.

And it was at the end of September in 2016, that Thomas received a call so many chefs can only dream of. A call from the Editor of the Michelin Guide, asking him to attend the first ever live presentation of the guide on October 3rd.

We are situated right in the heart of Dunster and you could easily combine a visit to our restaurant with a pleasant winter stroll through the medieval village of Dunster or with a visit to the nearby Snowdrop Valley which is only a few miles away.

We offer daily lunch specials from 12noon till 2:30pm with home-made soup as a starter, a selection of mains such as Fish & Chips and Vegan Curry as well as desserts. Along with tea, coffee, home-baked cake, and biscuits, the soup is available all day in case you need to warm up after walking in the fresh winter air.

Our main restaurant “The Gables” can host up to 60 people, our smaller “Deer Leap” room can accommodate parties of up to 20 guests. We are open all year round and dinner is served in the evenings from 5.30 pm. We specialise in traditional home-cooked comfort food – or in other words in food everyone enjoys to eat! A selection of popular wines, local beers and ciders are available to accompany the meal, special diets catered for with prior notice. Duende in Wiveliscombe: Open for bookings!

The Swan, Bampton: Open for bookings!

Voted Best Trencherman’s Pub 2016 and now winners of Visit Devon Pub of The Year Gold Award…

The Swan, which is an AA Four Star Inn and the oldest pub in Bampton, has scooped a plethora of awards for its food including being voted Best Trencherman’s Pub 2016. It has two AA Rosettes for Culinary Excellence as well.

Last year the pub was named (March, 2016) as a Highly Commended winner in the national tourist board VisitEngland’s Awards for Excellence 2016. This Award places The Swan in the top five businesses for excellence in the pub category in England.

It is set in the idyllic, historic, market town of Bampton, which still boasts a vibrant high street with a traditional butcher, baker and greengrocers. The area is hugely popular with ramblers and cyclists alike. 

The team has a passion for food and embraces the use of produce from the area to create some real pub classics, as well as some more modern English dishes.

The Swan’s menu is created from fresh, seasonal ingredients, sourced from nearby, on a daily basis by chef patrons Paul and Donna Berry and their talented team.

Donna said: “We try to keep our dishes simple, yet bursting with flavours and imagination. Our kitchen produces everything we serve here at the pub.

“We are dedicated to using all the local or regional produce available to us, needless to say we are so lucky living here in the Westcountry, we have local farmers supplying us with their beef, pork and lamb and the fishing communities providing us with the freshest cod for our classic cod and chips.”

This traditional country pub with a modern twist was originally lodgings to accommodate the masons and other craftsmen who were hired in 1450 to enlarge St Michael’s church, which is just behind the pub.

To add to all its awards, it has recently been renovated to a high standard with a new solid oak bar giving it a contemporary yet traditional feel.

The original fireplace and bread oven dating back to the fifteenth century were kept and now include a wood-burning stove, which guests can sit by in comfortable easy chairs. 

The atmosphere is relaxed and welcoming, there is a focus on Westcountry beers and real ales. There is also an extensive selection of wines from around the world.

Chambers Bistro, Minehead: Open for Bookings!

 

 

Head Chef Steven Hadley welcomes you to Chambers in Minehead.

Steven’s first taste of kitchen life was when he was given the job as a kitchen assistant at the Northfield Hotel in Minehead at the age of 15, where he worked and gained experience, happily for a number of years.

In 2009 Steven embarked on a two year Hospitality Diploma Course as the first year group at the brand new resources unit at West Somerset College. On leaving with a Triple Distinction he was awarded a place at the University of West London (UWL) being classically trained in Fine Dining and Management.

During his time at University, Steven was able to work with many great Chefs such as Heston Blumenthal and assisting the Roux Brothers during a heat of the Roux Scholarship.

Valuable experience was gained working at The Ritz Hotel, The Savoy Hotel and the Castle Hotel in Taunton, as well as cooking for the Queen at one of her Golden Jubilee celebrations, and Prime Minister David Cameron at the Curry Awards.

On leaving University, his first job was at Lower Slaughter Manor in the Cotswolds, before returning to Minehead and assisting with setting up of the Fine Dining restaurant at the Beach Hotel.

At the Age of 25, Steven has now owned his first restaurant ‘Chambers’ for two years.
